I think I have mentioned before that Tuesday nights are when OH and I have dinner with my parents, either at their place or here. Tuesday nights have also become a night of trials as lately Mum and I use them as an opportunity to try our new recipes and see if we can out do each other! Last night was no exception here with a Vegetable and Fetta Pie with Roast Vegies and Garlic Yoghurt Dressing served with Mango Whip for dessert.
The pie was not as spectacular as I thought, but the roast vegies with garlic yoghurt dressing (which I thought would be kinda average) was brilliant!
Roast Vegetables with Garlic Yoghurt Dressing
1 red capsicum diced
1 yellow capsicum diced
1 green capsicum diced
1 red onion cut into quarters
2 zucchini diced into chunks
150g sliced button mushrooms
1 punnet cherry tomatoes
200g tub of natural european yoghurt
1 tspn crushed garlic
2 tspns lemon juice
Preheat oven to 180C
Combine all vegetables in a baking dish, season with salt and pepper and spray lightly with oil. Bake for 45 mins, tossing every 15mins.
Meanwhile combine yoghurt, garlic and lemon juice and place in the fridge.
When vegies are tender, plate up and spoon over dressing.
This dressing is delicious and would be lovely with any kind of meat (I'm thinking especially lamb) or vegies (I'm also thinking mashed spud!). And what makes it even better is its so easy!
For dessert we had Mango Whip
Mangos have been appearing at the supermarket in abundance so I thought I should take advantage of this and use some to make a gorgeous summery dessert. This mango whip is so easy and it looks fantastic, your guests will think you have made a really swanky dessert and it takes no time at all!
You will need
250g extra light philly
1/3 cup icing sugar
500g tub of no fat greek yoghurt
2 x mangos
Remove cheeks from mangos and process until smooth and place in the fridge
Using an electric mixer combine philly, yoghurt and enough icing sugar to suit your tastes.
Layer yoghurt mix and mango in some nice glasses and place in the fridge for at least an hour to chill before serving.
If you like you can sprinkle some raspberry jelly crystals or a few fresh raspberries over the top before serving.
