Caramel Ginger Nut Bites

I was supposed to be making a caramel and giner nut slice, but it didnt quite work so I ended up making these lil bite sized treats and may I just say they are delcious!

Caramel Ginger Nut Bites

2 pkts Arnotts Ginger Nut Biscuits
1 tin condensed milk
125g butter
1/2 cup brown sugar

Break the biscuits in half and process in a food processor. Melt half the butter and add to the mix. Process until combined.
Melt remaining butter, condensed milk and sugar on the stove top until sugar has dissolved and the mixture has thickened. You will need to stir constantly so it doesn't burn.
Combine half the biscuit crumbs with the condensed milk mixture.
Place in the freezer for an hour or two until it is firm enough to roll into balls.
Roll tbspns of the mixture into balls and then roll in the remaining biscuit crumbs
- I didnt roll mine in biscuit crumbs but think it would be a good idea coz these are pretty sticky!
Then place them on some baking paper in a container and back in the freezer.

I tried one straight out of the freezer before and they are so nice and chewy and the ginger nut flavour is fantastic!
