Mediterannean Style Prawns

Ok so personally I have major issues with most seafood, but seeing as OH loves it so much, occasionally I'll cook him a treat (and I usually end up with a little treat for dinner myself!). OH was given a seafood cookbook for Christmas and lately he seems to be going through a prawn phase so I found a recipe I liked the sound of and decided to give it a go tonight (also possibly due to the fact that I had some Quorn spinach and cheese schnitzels in the freezer I was dying to try!)


I know that is a huge serving, but seeing as he doesn't get home cooked prawns that often, he likes a big serve when he finally gets the chance!

So for these lil babies (which OH has informed me were very very nice) you will need:

250g cooked, de-veined and shelled prawns.
3 spring onions thinly sliced
1 tspn crushed garlic
1 tin of tomato supreme (or about 1 cup of tomato passata)
1/2 cup dry white wine
1 tspn crushed / wet mediterannean herbs
salt and pepper to season
Couscous to serve

Cook the spring onions and garlic in a fry pan over medium heat for 2-3 mins.
Add wine and simmer for another 2-3 mins or until it has reduced by half.
Stir through tomatoe supreme and mediterannean herbs. Season with salt and pepper.
Simmer mixture for about 5 mins or until mixture has thickened.
Add prawns and stir through until well coated in the sauce. Cook for a further 2 mins - you are basically just heating the prawns up here.
Serve with couscous.

Now OH only got one meal out of this recipe, but as you can see it is massive so I reckon it would do two normal people!

And on a side note - my Quorn spinach and cheese schnitzel was freakin awesome. It was absolutely delicious and is officially my new favourite vegetarian freezer meal. I always have a box of vegetarian burgers or something in the freezer coz on Fri or Sat night once a week we have an 'easy' tea which usually involves steak and chips for OH and something vegetarian and chips for me! I had been on a kick with the Sanitarium Not Burgers, but they have officially been shafted now! I know the portion sizes are a touch small (but thats really not a bad thing) and they are a bit pricey but they are so worth it, I can't wait to try the rest of the range now.

I swear these new shoes just followed me home.....

I firmly believe that you should reward yourself in this life. For instance when I get money back at tax time I buy myself something and bank the rest, its kind of a saving incentive I suppose. If I have brought myself something or spent a bit of the money on a treat just for me then I am more inclined to save the rest you know? So given I'm about to get a pay out from my current job and go onto a bigger salary at my new job, I went out tonight and brought myself two new pairs of work shoes (which I needed) so it was both practical and exciting! And I also brought some lingerie at Bras N Things that I had been eyeing off for ages, they had a sale so why not! So here are the shoes I brought as my New Job Treat!


These are my practical yet gorgeous work shoes.


These will probably also be work shoes but will also be great for anytime really. The back of the shoe and the heel is patent leather but the sides are covered in a soft, stretchy almost transparent material and they have so much padding in them, they are like walking on air!!

And while I was browsing I found this...


I had to get it for OH, I don't know if you can read the packaging but it's a marshmallow skull and it comes with a red raspberry syrup pen to decorate it with! I was mega excited when I found it...how awesome would it be for kids! Not only can they be creative but they also make themselves a tasty snack! Turns out however that it is not just for kids as OH was also particularly excited by it so I will post photos of what he comes up with!

Anyway, there is one delicious smelling lamb curry on the stove so I am going to eat and I will report on that tomorrow!

Moroccan Your Socks Off!!!

That is what my OH says whenever we have Moroccan inspired / flavoured stuff for tea. And this Moroccan Hot Pot definetly rocked our socks off! And it was so very easy too, plus the combination of moroccan marinade and light and creamy evaportated milk was pretty awesome, next time we might try it with some coconut milk to just give it that hint of coconutty goodness....anyway, if you are wondering what I am on about here is the dish


And here is the recipe!

Moroccan Hot Pot
500g diced lean lamb
1 onion diced
200g sweet potato diced
1 pkt Masterfoods Moroccan marinade
185ml Light and Creamy Evaporated Milk
2 zucchini diced
1 cup of chickpeas
2 tspns cornflour

Add the lamb and onion to a heavy based casserole dish and cook until meat is browned.
Add sweet potato, marinade and 1 cup of water. Cover and let simmer for 10 mins or until sweet potato is tender.
Add remaining ingredients and simmer uncovered for another 5 mins or until sauce thickens.
Serve with rice, cous cous or warm crusty bread......so easy and the lamb is so tender no one will know you haven't had the casserole in the oven for the last 2 hours! Great for a quick after work meal!

Now onto more important things such as dessert! Tonight we are test driving Aunt Betty's Raspberry Jelly Jiggle ice cream topping, sounds impressive huh! In my head I am kinda picturing it as a jelly version of ice magic....ohhh I haven't had ice magic in years - possibly due to my tendency to eat it out of the bottle, but that is besides the point. I am off to the kitchen and will be back shortly with the results!


Excuse me while I go back for seconds! Ok so it was pretty much just jelly in a bottle and pretty much the same as having jelly and ice cream for dessert, but I mean seriously how good is jelly and ice cream!! The jelly jiggle is made with real raspberry juice and has a real raspberry flavour as opposed to some of the artificial flavourings you get in some products. All in all we are big fans!!
